Once Mebel decides to take cooking classes, her first step is to decide on a cuisine to learn. What did you think of her choice? What’s your cooking experience, and which cuisine would you like to learn how to cook?
Mebel’s choice of French cuisine was very consistent with her extravagant tendencies.
So many choices when it comes to cuisines I would like to master. Two that are top of mind are Indian (and understanding the differences across the vast country) and Vegetarian. I would also like to be a better baker - I like the precision and science behind baking.
I had the good to take. Hines cooking classes in Taipei from Sally Duh. I still have all of the recipes and my hand written annotations to clarify process. I learned that most Chinese cooks use fresh seasonal ingredients and can easily change a recipe with a few basic sauces, herbs and spicces.
Now, I use what I learned over 30 years ago to create Chinese and Italian dishes.
I’ve learned to bake bread and prefer that to any bakery.
I use Julia Child’s recipes for French dishes.
In Puglia, I learned how to make pasta.
It is on my bucket list to take cooking workshops in Sicily and Tuscany because I love the food.
Mebel decided to learn French cuisine because there is a perception that it is ‘the best’ and more likely to impress Henk.
